In a hygienic floor the grating is cleaned as often as the floor is, which changes what matters. A weld bead holds residue, a rough galvanized surface holds residue, and a panel too heavy to lift one-handed does not get lifted as often as the cleaning schedule says it will.
Press locked stainless answers all three. There is no weld bead, the surface is the same material everywhere, and acid passivation after fabrication restores the passive layer that cutting and forming disturb. Panel size is then set by what one person can lift, not by what fits the opening in the fewest pieces.
